Consider Bardwell Farm is a 300-acre farm and was Vermont's first dairy coop, called "The Pawlet Cheese Company." Consider made cheese out of small neighboring farms' milk and sold it as far as New York City.  A century and a half later, Angela Miller and Russell Glover are revitalizing the tradition with pasture-based raw milk from cows with the support of their neighbor farm partner, Indian River Farm.

Long Description

Rupert Reserve, 8oz -A Jersey cow’s raw milk, Alpine-style cheese inspired by Gruyère and Comté, Rupert ages a minimum of twelve months, revealing a golden paste which offers a rich complexity of flavor with toasty and buttery notes and a hint of sharpness. Try Rupert with cured meat, dried apricot, and a dry Riesling.

Pawlet, 8oz - Inspired by an Italian-style Toma, this semi-firm washed-rind cheese is mild, creamy, and grassy with notes of roasted peanuts along the rind. It makes the most decadent grilled cheese. Try Pawlet with whole grain mustard, toast, and a wheat beer.

Dorset Hidden Star Wedge, 8oz - A limited-edition, washed-rind cheese with hard cider from Vermont’s Slyboro Ciderhouse. Beneath the orange-hued rind, the cheese is delicately balanced with notes of funk, nuanced by the sparkling hard cider. Contains sulfites.

About the Producer

Consider Bardwell Farm is a 300-acre farm that was originally established in 1864 by Consider Stebbins Bardwell. It was Vermont's first dairy coop, ("The Pawlet Cheese Company") where Consider made cheese out of small neighboring farms' milk and sold it as far as New York City. A century and a half later, Angela Miller and Russell Glover are revitalizing the tradition with pasture-based raw milk from cows with the support of their neighbor farm partner, Indian River Farm.

Spring Goat

I wanted to love this Spring Mother’s Day Cheese Gift Box so much. It arrived ready to be served. It was no longer cold and the box was extremely fragrant. Disappointed that the selection was three goat cheeses. Would have preferred an assortment; cow, sheep, blue, etc. I will give it a go one more time.

Shipping Details

Hardware

If you have purchased cheese hardware from our Grotto collection, it usually takes us 1 to 3 business days to ship your order, unless otherwise listed on the respective product page.

Cheese Orders

As the cheeses are a fresh product, we want to ensure the quickest transit time as possible, so your order arrives in the best possible condition.  Express shipping costs range from $25 - $55 depending on the package size, delivery window, location and carrier. We ship Mondays only each week, and orders must be placed by Thursday the week prior to be included in Monday's shipments.  If you purchased a cheese subscription with a set shipping schedule (Meet the Makers or any Gift Subscription), please refer to the respective product page for the fixed shipping schedule.

Please note: cheese ships from our cheese warehouse and hardware ships from our hardware warehouse. If you are purchasing both hardware and cheese, there will be a shipping charge for the cheese portion of your order.

International Orders

We are sorry, but we aren't legally allowed to ship cheese across the US border!  We can, however, ship our hardware from our Grotto collection worldwide.  Please note that the shipping costs options you see at checkout do not include customs, duties, and taxes which will be billed to you upon reaching the border, and will be an additional expense.  Those costs vary from country to country, but we recommend calculating at an additional 20% charge. If you refuse the package due to these additional fees and the hardware is returned to us, we will be able to issue a refund minus the outbound and return shipping costs.
